Do you ever crave a bowl of mac and cheese or a delicious slice of cake, but don’t have the time to make a giant family size meal? Or need a quick, easy breakfast to start your day? Thankfully, you can make single serving versions of these meals for breakfast, lunch, dinner, and dessert in the microwave. With a mug, a few ingredients, and a microwave, you can cook up hundreds of meals for yourself in under five minutes. Recipes can be found all over food blogs, Pinterest, and even on popular food recipe websites. Here are a few simple recipes:

Breakfast:

Blueberry pancake for one:

Ingredients:

3 Tablespoons flour

¼ teaspoons baking soda

2 Tablespoons maple syrup/honey/agave

1 Tablespoon Milk

1 Tablespoon flavorless oil (vegetable, canola, coconut, etc.)

1 Egg

1 Tablespoon blueberries* (Frozen or Fresh)

Directions:

  1. Whisk together all ingredients in a microwave safe mug. Mix thoroughly until no lumps.
  2. Microwave batter for around one minute. If batter still looks undone after one minute, continue to cook in 10 second bursts until center in soft, but solid.
  • Instead of blueberries, you can use any fresh or frozen fruits or nuts.

 

PB&J Oatmeal (Vegan)

Ingredients:

3 Tablespoons dried oats

6 Tablespoons water

2 Tablespoons milk (Regular, soy, almond, etc.)

2 teaspoons peanut butter

2 teaspoons jelly of your choice

Directions:  

  1. Whisk all ingredients together in a microwave safe mug
  2. Cook for one minute, then stop and stir. Cook for another one minute, and continue cooking until done. Will take about three minutes in total to cook.
  3. Take out and add a little milk if desired.
  4. Top with jelly and enjoy!

Lunch/ Dinner

Mac and Cheese

Ingredients:

½ cup of dry pasta

½ cup milk or water

½ cup shredded cheese (You can use vegan cheese)

Directions:

  1. Put dry pasta into a large microwave-safe mug. Put paper towel under mug to catch overflowing water. Microwave for one minute, then stir. Microwave for another minute. Stir. Check to see if pasta is thoroughly cooked, If not, heat an additional 30 seconds, or until pasta is done.
  2. Pour out excess water from mug. Immediately add cheese and stir until melted. Eat immediately.

 

Pizza in a Mug

 

Ingredients:

4 Tablespoons flour

⅛ teaspoon Baking powder

Pinch of baking soda

Pinch of salt

½ teaspoon Italian seasoning (optional)

3 Tablespoons milk (can use unflavored vegan milk)

1 Tablespoon oil

1 Tablespoon + 1 teaspoon shredded cheese (You can use vegan cheese)

Pepperoni slices (optional)

Side of Tomato sauce (optional)

Directions:

In mug, mix flour, baking soda, baking powder, salt,  seasoning (if using), milk, and oil. Mix until batter is smooth. Add 1 tablespoon of cheese and half of pepperoni slices to batter. Sprinkle the remainder of cheese on top of batter. Add the rest of the pepperoni to top of the pizza. Cook for one minute in microwave. Remove from microwave and top with tomato sauce if desired.

Dessert

Chocolate Cake (Vegan)

Ingredients:

2 Tablespoons flour

2 teaspoons cocoa powder

¼ teaspoon baking powder

Pinch of salt

2 Tablespoons milk (Regular or almond/soy/etc.)

1 Tablespoon oil

Handful of chocolate chips (optional)

Nutella or peanut butter (optional)

Directions:

Sift flour, cocoa, baking powder, and salt together in a mug. Stir in milk and oil until smooth. Make sure all ingredients are mixed thoroughly.  Stir in chocolate chips if using. Add a spoonful of Nutella or Peanut butter to center of batter if desired.  Microwave cake batter for about one minute. Let cool slightly.

Peanut butter Cookie

Ingredients:

3 Tablespoons smooth peanut butter

1 Tablespoon + 1 teaspoon sugar

1 large egg
Directions: Whisk all ingredients together in a microwave-safe mug. Microwave for one minute. Let cool slightly before eating.
