Festive St. Patrick’s Day Treats
Celebrate St. Patrick’s Day with this delicious dessert!
Authentic Irish Apple Cake
Cake Ingredients:
- ½ cup unsalted butter at room temperature
- ½ cup granulated sugar
- 2 large eggs
- 3 tbsp whole milk
- 1 ¼ cup all purpose flour
- 1 tsp baking powder
- 1 tsp cinnamon
- ⅛ tsp salt
- 3 Granny Smith apples, peeled and thinly sliced
Streusel Topping Ingredients:
- ¾ cup all purpose flour
- ¼ cup rolled oats
- 6 tbsp unsalted cold butter, cut in small pieces
- ½ cup granulated sugar
Custard Sauce Ingredients:
- 6 large egg yolks
- 6 tbsp granulated sugar
- 1 ½ cup whole milk
- 1 ½ tsp vanilla
Instructions
- Preheat the oven to 350F. Grease a 9 inch springform pan.
- Make the custard sauce: Bring milk to a simmer over medium heat. In a separate bowl, whisk the yolks and sugar until well combined. Drizzle some of the hot milk into the egg mixture. Whisk constantly. Drizzle a little more, then add the mixture into the pan of hot milk and continue to stir until the mixture thickens and turns velvety. Lastly, stir in the vanilla.
- Pour the custard through a sieve into a bowl and cover. Cool in the refrigerator.
- To make the streusel topping, blend the flour, oats, butter, and sugar until the mixture has a crumbly texture. Put it in the refrigerator.
- To make the cake, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time.
- In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt. Fold the dry ingredients into the butter/sugar mixture, along with the milk.
- Spoon the batter into the prepared pan and top with the sliced apples and then the streusel topping.
- Bake for 50-60 minutes, until the top is lightly browned and a toothpick comes out clean.
- Let cool and enjoy!
